Alkalinity: As a salt of a strong base and a weak acid, its aqueous solution is mildly alkaline, making it an excellent buffering agent.
Acid Reaction: It reacts readily with strong acids (such as hydrochloric acid or sulfuric acid) to generate acetic acid and the corresponding sodium salt.
Thermal Reaction: It absorbs heat during the melting process. When heated to 120°C, it loses its water of crystallization to become Anhydrous Sodium Acetate, and undergoes full decomposition at temperatures above 324°C.
